Creamy Lemon Orzo with Greens

Creamy Lemon Orzo with Greens

Ingredients
1 bunch collard, mustard or turnip greens
1 Tbs extra virgin olive oil
2 cloves garlic, thinly sliced
2 cups vegetable or chicken broth
1/2 cup heavy cream
1/4 tsp salt
1/4 tsp black pepper
1 cup orzo, uncooked
1 small lemon, juice and zest
feta cheese, for garnish
Directions
  1. Wash the greens, and pat dry.
  2. Cut each leaf to remove the thick portion of the center stem.
  3. Discard stems. Slice the leaves.
  4. Heat a large skillet over high heat.
  5. Add the oil and greens.
  6. Reduce heat to medium.
  7. Sauté the greens for 2 minutes.
  8. Add the garlic. Sauté for 1 more minute.
  9. Add the broth, cream, salt and pepper.
  10. Bring to a simmer. Add the orzo.
  11. Cook for 8 to 10 minutes or until orzo is tender and liquid is absorbed.
  12. Turn off the heat.
  13. Stir in the lemon juice and zest.
  14. Top with feta cheese before serving.
